Cajun Shrimp Baked in the Shell
The better the shrimp, the better the dish! This recipe is for 5 pounds. I have made it for 1,2,3 and 4 pounds. Allow 1/2 lb (6-8) shrimp per person . This recipe for 4 pounds of shrimp serves 8-10. More if served with other dishes.
2 cups (4 sticks) melted butter
1/4 cup Worcestershire sauce
1/4 cup fresh lemon juice
2 tablespoons freshly ground black pepper
1-2 tablespoons hot sauce Tabasco or Texas Pete
6 cloves garlic, minced
2 teaspoons salt
4 pounds unpeeled large shrimp
2 lemons, thinly sliced
Very crusy French or Italian bread for dipping
Preheat your oven to 400 degrees F.
In an oven proof casserole ( I use a large oval le Creuset) Melt the butter,saute the garlic lightly, do not let it color. Add Worcestershire sauce, lemon juice, pepper, hot sauce, and salt.
Off the heat , add your shrimp and toss to coat. Place thinly sliced lemons on top.
Bake,uncovered, for 20 minutes or until the shrimp turn pink, stirring once or twice.
Serve the Shrimp with Sauce spooned over in individual bowls. Serve with crispy bread for dipping in the spicy butter
sauce.
Place bowls on the table for the discarded shells.
A fresh green salad with a light vinaigrette is all you need to make this a meal.
