Crab Supreme
Ingredients:
4 Tablespoons Butter
2 Tablespoons Lemon Juice
1 Chopped Onion
3 Dashes Worcestershire Sauce
1 Chopped Jalapeno Pepper
1/4 Teaspoon Pepper
1/2 Chopped Bell Pepper
2 Ounces Drained, Diced Pimento
3 Tablespoons Flour
1 Pound Lump Crabmeat
1/2 Teaspoon Dry Mustard
3 Tablespoons Mayonnaise
1 Cup Whipping Cream
2 Tablespoons Onion-Flavored Melba Toast Crumbs
Directions:
Melt butter. Saute’ onion and bell pepper. Add flour and mustard. Stir. Gradually add cream and bring to low boil for 2 minutes. Remove from heat.
Stir in lemon juice, Worcestershire sauce, pepper, red pepper and pimiento. Let sit 5 minutes, then add crab and mayonnaise. Spoon into 4 individual baking dishes and top with crumbs. Bake at 350 degrees for 20 minutes.
