Black Bean Relish Recipe

Ingredients:
1 (15-ounce) can black beans, drained and rinsed
1/4 medium red bell pepper, cut into 1/4-inch dice
1/4 medium red onion, cut into 1/4-inch dice
1 medium jalapeno pepper, seeded and cut into fine dice
3/4 cup loose-packed cilantro leaves, coarsely chopped
1 cup frozen corn kernels, defrosted
1/2 teaspoon ground cumin teaspoon cayenne pepper
1/4 teaspoon chili powder
1/4 cup Key lime juice
Salt and fresh-ground black pepper, to taste

Directions:

Mix all the ingredients together in a large nonreactive bowl. Can be made several hours ahead and refrigerated. Stir occasionally and remove from the refrigerator about 30 minutes before serving.
