Carne con Papas / Typical Meat and Potatoes Stew
2 large chopped onions
8 minced garlic cloves
2 chopped green pepper
3 chopped ripe tomatoes
1/4 cup olive oil
1 tablespoon oregano
1/2 tablespoon cumin
2 1/2 pounds beef top round, cut into 1-inch cubes
1 tablespoon green olive JUICE (liquid from jar).
8 chopped pimento stuffed olives
1/4 cup raisins
4 large potatoes cut into squares
1 teaspoon salt (or more to taste)
1, 8 oz can tomato sauce
Sauté onions and green peppers till caramelized. Add garlic. Saute 30 seconds. Add rest of ingredients except potatoes and cook 5 minutes. Add potatoes. Add water to cover all ingredients and bring to a boil. Instantly lower heat. Cover pot. Simmer on low 1 hour.
Serves 6-8. Serve over bed of white rice.
