Mango Shrimp
1 (15oz.) can Sliced Mango (chilled)
1 red bell pepper, sliced
1 shallot, minced
2 tsp. sesame oil
1/2 cup fresh cilantro leaves, minced
1 lb. shrimp, cleaned and deveined
3 Tbsp. fresh lime juice
16 oz. black beans
pasta (choice of type)
In a medium bowl, toss shrimp with lime juice.
Boil a large pot of water. Add pasta and cook until al dente (about 8-10 minutes), drain
Saute bell peppers and shallot in sesame oil until pepper is almost soft
Continue to cook until shrimp is pink, stirring occasionally, for about 4 minutes
Add black beans, cooked pasta and mango, stir together
Remove from heat when beans are heated through. Serve
