Fried Cracked Conch
4 conch steaks, about 4 ounces each
1 egg, beaten
1/2 cup whole milk
1 cup cracker meal
Salt and freshly ground pepper to taste
Vegetable oil for frying
With a heavy mallet, pound conch for 10-15 minutes to break the tough
membranes. Beat the egg with milk. Dip conch into the cracker meal then into
the egg mixture and then into the cracker meal again. Heat 3 inches of oil in a
heavy skillet to 350:. Season well. Fry conch until golden brown, turning as
needed.
