Gingered Papaya

1 lb. papaya
2 Tbsp. lime juice
1 Tbsp. honey
2 tsp. ginger root, peeled and chopped

Peel papaya and quarter lengthwise; discard seeds. Cut 4 lengthwise slits in
each papaya wedge, leaving about 1/2 inch of one end intact. Fan wedges and
place on a rack. Place rack in a roasting pan. Combine lime juice, honey and
ginger root. Brush papaya with mixture and cover loosely with aluminum foil.
Bake at 350 degrees for 15 minutes.
