Mahi Mahi with Macadamia Nut Sauce

Marinade:
2T Sweet cooking wine (mirin) 1/8t Black pepper

Sauce:
3T Oyster sauce 1T Honey
3T Macadamia Nuts 1/8t Seasalt
3T Water

Mahi Mahi: 2#

Garnish:
2T Chopped macadamia nuts 1/2 Papaya, sliced

Marinating the Mahi Mahi:
1. Score across mahi mahi with 1/2″ diamond scores, being careful
not to cut through
2. Place in marinade and marinate for 30 minutes

Making the Macadamia Nut Sauce:
1. Place ingredients in blender and blend
2. Place in bowl and set aside

Grilling the Mahi Mahi:
1. Place on barbecue grill or on broiler rack
2. Cook until done, about 2 to 3 minutes per side

To Serve:
1. Arrange slices of papaya in circle on plate
2. Place grilled mahi mahi in center and nap with macadamia nut
sauce
3. Garnish with sprinkle of chopped macadamia nuts and serve
