Walla Walla Relish
3 cup Onions, Walla Walla; sliced 1/4″ or other sweet onion
Cooking spray
1 cup Tomato; diced, seeded
2 Tbsp Basil, fresh; thin sliced
1 1/2 Tbsp Peppers, jalapeno; seeded
-chopped
2 tsp Oil, extra virgin oil
2 tsp Vinegar, white wine
1/4 tsp salt
1/8 tsp pepper
Arrange onion slices in a single layer on a jelly-roll pan coated with
cooking spray. Bake at 400 degrees for 15 minutes. Turn over the
onion slices, and bake an additional 25 minutes or until tender and
lightly browned. Let cool; coarsely chop onion.
Combine the chopped onion and remaining ingredients in a bowl; stir
well. Let stand at room temperature 20 minutes before serving.
