Baked Cajun Red Snapper
1 (2 1/2 – 3 lb.) Whole red Snapper, scaled, gutted and rinsed in cold water
6 Cloves Garlic, crushed
4 Whole Green Onion Stalks
1 cup Green Onions, chopped (green tops, included)
1 cup Celery, finely chopped
3 Tbsp. Butter or Margarine
Cajun Seasoning – to taste
Paprika
Fresh Parsley, chopped – as a garnish
Cover red Snapper completely with Cajun seasoning, then sprinkle with
paprika and rub in well. Saute green onions and celery in until just tender,
then stuff cavity of fish with mixture. Bake Snapper at 425 F (45-50
minutes); remove from oven and garnish with whole green onion stalks and
parsley. Serve immediately.
