Fried Pineapple

Preheat oil in deep fryer to 350 F. Cut peeled and cored fresh
pineapple into 1-inch thick slices and then into wedges. Pat wedges as
dry as possible, dip in Basic Batter for Fruit and fry, turning
occasionally as they float, about 3 minutes. Drain and serve.

Optional: Sprinkle with confectioners’ sugar or serve with teriyaki
sauce for dipping.

Basic Batter for Fruit

Ingredients:

1 (8-ounce) box Tony Chachere’s Shredded Coconut Batter mix
1 egg
3/4 cup club soda or beer

Directions:

Combine all ingredients and stir until smooth.
