Baked Scallops with Spicy Peanut Topping
1 tsp olive oil
1 1/2 lbs sea scallops
1/3 cup plain breadcrumbs
1/3 cup roasted and salted peanuts
1/2 tsp fresh grated ginger
1/2 tsp red pepper flakes
1/4 tsp garlic powder or small clove garlic
1 Tbsp butter melted and cooled
Coat a 9 inch round cake pan with olive oil. Arrange scallops in a single layer in
pan. In a food processor add the breadcrumbs, peanuts, seasonings and process to
resemble coarse sand. Pulse in melted butter. Sprinkle mixture over scallops.
Bake in a preheated 425 F oven about 12 to 14 minutes or topping is light golden
and scallops are cooked through Serves 2 to 4 appetizer or main servings.
