Crab Salsa
1/2 lb bay scallops
1/2 lb lump crab meat
1/2 c fresh lime juice
1 t grated tangerine rind
2/3 c chopped tangerine (about 1 tangerine)
1/2 c peeled, seeded, and chopped tomato
2 T finely chopped purple onion (use more)
1 T chopped fresh cilantro
1 T minced fresh jalapeno
1/8 t salt
Fresh cilantro leaves (optional)
You can make your own tortilla chips by cutting a tortilla into 8 wedges;
arrange in a single layer on a baking sheet. Bake at 350F for 10 minutes or
until crisp. Let cool. Store in airtight container.
Cook scallops in a skillet over medium heat 3 minutes or until done. Drain.
Cool and combine with rest of ingredients except the garnish. Chill. I
omitted the scallops and it was terrific with crab only.
