Caribbean Grilled Mahi-Mahi Fillets
* 4 mahi-mahi fillets (6 ounces each )
* 1/4 cup shallots, chopped
* 1/3 cup red bell pepper, chopped
* 1/3 cup yellow bell pepper, chopped
* 3 tablespoons olive oil
* 3/4 cup chunky salsa
* 1 1/2 tablespoon chopped cilantro
* 1/4 cup apricot preserves
* 3/4 teaspoon garlic salt
* seasoning salt
How to cook:
* In a large skillet, heat 1 tablespoon of the olive oil over a medium heat until hot.
* Add shallots and bell pepper and saute 5 minutes.
* Add salsa, apricot preserves, cilantro, and garlic salt.
* Blend well and cook 2 minutes.
* Brush the mahi-mahi fillets with the remaining olive oil and sprinkle with seasoning salt.
* Grill or broil 5 minutes on each side or until fish starts to flake.
* Spoon bell pepper mixture over the Caribbean Grilled Mahi-Mahi Fillets before serving.
