Scallops with Lime Butter
Ingredients:
12 sea scallops
Finely grated zest and freshly squeezed juice of one lime
2 tablespoons fresh chopped parsley
2 tablespoons oil
5 tablespoons softened butter
Flour
Salt and pepper to taste
Directions:
1. Combine lime zest, one-half of the butter, one-half of the lime juice, 1/2 tablespoon flour, and salt. Mix well.
2. Season scallops with salt and pepper. Lightly coat scallops in flour.
3. In a large frying pan, heat oil and the rest of the butter. Sauté scallops, 2-3 minutes either side (or until until lightly browned). Remove pan from heat, distribute the butter mixture and the rest of the lime juice over the scallops. Cover the pan and set aside for 2-3 minutes until the butter is melted.
4. Place scallops in 6 scallops shells. Add parsley to the butter in the pan, mix well. Sprinkle the butter over scallops and serve.
