Coconut Milk Pie
3/4 cup shredded unsweetened coconut (optional)
3/4 cup Splenda/or sweetener
1/2 cup Carbquik
3 Tbs. coconut oil
one can of coconut milk
1 1/2 tsp. vanilla
4 eggs
Heat oven to 350. Spray 9 inch pie plate.
Stir all ingredients in a bowl until mixed well. Pour into pie pan.
Bake 50-55 minutes or until knife inserted in the center comes out clean.
Cool 5 minutes.
You can serve this warm or refrigerate it right away.
