Corvette Key Lime Cake
3/4 c. good oil
3/4 c. orange juice
5 eggs
1 (3 oz.) pkg. lime Jell-O
1 pkg. lemon cake mix
Sauce:
1/4 c. lime juice
5-6 T. confectioner’s sugar
Frosting:
1 (8 oz.) pkg. cream cheese
4 T. butter
1 tsp. vanilla
1 (1 lb.) box confectioner’s sugar
Preheat oven to 325 degrees. Grease and flour 9-by-13-inch pan.
Combine cake ingredients and pour in pan. Bake for 20-30 minutes.
Prick with fork and pour lime juice and confectioner’s sugar over
cake.
To make frosting: Soften and beat together cream cheese and butter;
add vanilla and confectioner’s sugar.
I am a corvette fan, so, I like to shape my cake like a Corvette body. The corvette is very sleek and seductive. The classic curves coupled with the sharp edges seem to grab hold of my spirit. I like speed almost as much as I like cake. I chose this recipe mostly because my corvette is painted key lime yellow. I had an old stingray, but I have to give it up to finance raising a family. I recently bought my newer model stingray. It was on my birthday and my wife had made this cake for me. Now I make it all the time. I am not sure if it is because I like the cake, or if I like to look at the lines of a corvette. I think the only thing prettier than my corvette, is my corvette cake. I am not quite sure which goes faster. VROOOOOOOOOOOOOOOMMMMM.
