Baked King Mackerel

King mackerel, cleaned and cut into 3 inch pieces
Salt and pepper
3 Tbsp. water
1 Tbsp white wine vinegar
Parsley and shallots

Sprinkle fish with salt and pepper. Place in greased baking dish. Sprinkle
with parsley and shallots. Pour water and vinegar over fish. Bake In a
350*oven for , 60 minutes. While fish is baking, make sauce.

Sauce:
1/3 cup cooking oil
1 large onion, chopped
2 (6 oz.) cans tomato paste
1 Tbsp. sugar
1 pod garlic
1 bell pepper, chopped
1 stick celery, chopped
5 cup water
1 can sliced mushrooms
1/2 lemon, sliced
Salt and pepper
Parsley and shallots

Saute onions in oil until soft. Add tomato paste, garlic, bell peppers,
celery, salt and pepper.Cover and cook 15 minutes. Add sugar. Add water.
Stir together; cover and cook until gravy thickens. Add mushrooms,
parsley, and shallots. Pour sauce over fish. Place lemon slices on top and
bake 5 minutes. When fish is tender, transfer to a platter and serve with
rice.
