Fried Swordfish Steaks With Herbs

I picked up this recipe on one of my many Mediterranean cruises. I just had to share it.

6 swordfish steaks, about 8 oz each
1/2 cup extra-virgin olive oil
1/2 cup all-purpose flour
2 cloves garlic, finely chopped
1/4 cup finely chopped parsley
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh thyme
1 dried chile pepper, crumbled
salt and freshly ground black pepper to taste

Rinse the swordfish steaks and dry them carefully with paper towels ..
Heat 1/4 cup oil in a large skillet over high heat. . Flour the swordfish
steaks and when the oil is hot, fry them for 15 minutes, or until golden
brown on both sides. Remove from the skillet and drain on paper towels ..
Mix the remaining oil with the garlic, parsley, oregano, thyme, and chile
pepper in a small pan. Season with salt and pepper and cook over medium
heat for 15 minutes .. Pour the sauce over the swordfish steaks and serve
hot.
