Key Lime Christmas Cookies

These are my favorite Christmas cookies with a touch of the tropics thrown into them. I package them up in bright Seran wrap and give them to my co-workers and other people that I don’t have the time, energy, money, or thought to actually buy for.

* 1/4 cup powdered sugar, plus more for rolling
* 1 cup all-purpose flour
* 1/4 cup ground almonds
* 1/4 cup shredded coconut
* 1 tsp. fresh Key lime juice
* 1 Tbsp. Key lime zest

Preparation:

1. Preheat oven to 325 degrees F.

2. Cream together butter and 1/4 cup of powdered sugar with an electric mixer.

3. Beat in flour.

4. Stir in almonds, coconut, lime juice and lime zest.

5. Shape into 1-inch balls and place on ungreased cookie sheets.

6. Bake in preheated oven 12 to 15 minutes until lightly browned on the bottom.

7. Let cool completely. Roll in powdered sugar.
