Papaya Salad

1 sm. Maui onion, thinly sliced
1 semi-ripe papaya, peeled, seeded &
cubed
1 bunch watercress, trimmed & cut in
1″ pieces
Lettuce leaves

Serves 4 to 6. DRESSING
1/3 c. tarragon vinegar
1 tbsp. honey
1 tbsp. poppy seeds
1 tbsp. chopped fresh mint
1/2 tsp. ground coriander
Dash white pepper

Soak onion in a bowl of water for 10 minutes. Drain. Add papaya
and refrigerate for 1 hour. Combine dressing ingredients. Toss
papaya, onion and watercress with dressing. Serve on bed of lettuce.
